Sicilian style pizza dough

for 1 pizza

  • 100 g all purpose flour

  • 100 g semolina flour

  • 100 g water at room temperature

  • 1 g brewer yeast (dissolved in 20 g of water)

  • 3 g of salt

  • 2 g extra virgin olive oil

Put the flour into a a bowl, make a well and, slowly, start to incorporate the water, the extra virgin olive oil and the dissolved leaven. Gradually combine the ingredients and continue kneading for at least 15 minutes; then, add the salt and knead again for about 10 minutes until the mass is smooth, elastic and soft. Cover the bowl with a cotton towel. Let the dough rise in a dry place over night (in your oven for example). When the dough has doubled its volume, spread it on a baking dish (diameter: about 30 cm). Garnish the dough as desired: first the tomato sauce and then other ingredients (mozzarella, mushrooms, etc.). Bake in hot oven at 200° C for about 12 minutes. Enjoy your pizza!
